Maple Energy Squares

 

Makes 16 squares

Prep time 20 minutes

Cook time 20-25 minutes

 

 

Ingredients

125ml oatmeal

125ml skimmed milk powder

125ml roasted sunflower seeds

80ml all-purpose flour

170ml pure maple syrup

2 large eggs

125ml dried cranberries

125ml dried apricots, chopped

125ml almonds, sliced

125ml coconut flakes

 

Method

Preheat the oven to 180ºC/ 160ºC.

Spray a 23cm square baking tray with cooking spray or brush with vegetable oil.

In a food processor, combine the oatmeal, skim milk powder, sunflower seeds, flour, maple syrup and eggs.

Process for 10 seconds until the mixture is smooth.

Stir in the cranberries, apricots and almonds then pour into the prepared baking tray.

Sprinkle with coconut flakes.

Bake for 20–25 minutes or until the edges are golden and the centre is set.

 

Chef’s tips

These energy squares are a great snack for before or after exercising.

Use any dried fruits of your choice in the energy square mix.
